Cryoconcentration is a relatively little used unit technique in the food industry. It consists in separating soluble solids from the aqueous phase by freezing water. As a first step, scientific papers on cryoconcentration applications for liquid foodstuffs were reviewed in detail. Subsequently, a facility on a semi-industrial scale was designed for the cryoconcentration of liquid foodstuffs.
